29 Roasted Red Pepper Vinaigrette

Ingredients

  • 5 pounds of red peppers
  • Apple cider vinegar (½ part vinegar to 2 parts pepper juice)
  • Neutral oil, like canola, as needed
  • Salt to taste

Steps

  1. Char peppers. Place in container with lid until cool. Peel off skins.
  2. Juice peppers in juicer.
  3. Put pepper Juice into blender. Add vinegar. With blender on, add oil until thicken. Season with salt.
