37 Narutomaki (fish cakes)
Ingredients
- 200 grams fish
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon mirin
- 1 egg white
- 1 beet jus
Steps
- Blend all ingredients in robo-coup.
- Separate the fish puree in two.
- Spread one half of the mix onto plastic wrap pulled over a large cutting board. Around ½ inch thick.
- Mix the other half of puree with the beet juice. Spread this mix on top of the first fish puree.
- Roll plastic wrap into a roulade. Tie the the ends. Steam in combi for 15 minutes.
