37 Narutomaki (fish cakes)

Ingredients

  • 200 grams fish
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon mirin
  • 1 egg white
  • 1 beet jus

Steps

  1. Blend all ingredients in robo-coup.
  2. Separate the fish puree in two.
  3. Spread one half of the mix onto plastic wrap pulled over a large cutting board. Around ½ inch thick.
  4. Mix the other half of puree with the beet juice. Spread this mix on top of the first fish puree.
  5. Roll plastic wrap into a roulade. Tie the the ends. Steam in combi for 15 minutes.
