4 Char Siu Pork
Makes 8 servings.
Ingredients
- ¼ Cup Hoisin Sauce
- 1 Tablespoon Dark Soy Sauce
- 2 Tablespoons Cooking Wine
- 1 Tablespoon Oyster Sauce
- ¼ Cup Sugar
- 2 Teaspoons Salt
- 3 Pinches Curing Salt
- 1 Teaspoon Chinese Five-Spice Powder
- 1 Teaspoon Red Food Coloring (optional)
- 4 Pounds Pork Shoulder, cut with the grain into 3 or 4 long strips, 2 to 3 inches thick
- ¼ Cup Honey
Steps
- In a large bowl, combine all of the ingredients, except the pork and honey, and mix well. Add the pork, massaging the marinade into the meat. Cover the bowl and refrigerate for 48 hours.
- When ready to cook the pork, let stand at room temperature for 1 hour.
- Preheat the oven to 375°F, with a pan of water at the bottom of the oven.
- Place the pork on a sheet pan, reserving the marinade, and roast for 25 to 30 minutes. In a bowl, combine the reserved marinade with the honey and mix well.
- Using tongs, turn over the pork, brush with the reserved marinade, and continue ro roast. After 20 minutes, turn the pork over again, brush with the marinade, and roast for another 10 to 20 minutes, until the pork is cooked.
- Let the pork rest before slicing against the grain to serve.
