29 Roasted Red Pepper Vinaigrette
Ingredients
- 5 pounds of red peppers
- Apple cider vinegar (½ part vinegar to 2 parts pepper juice)
- Neutral oil, like canola, as needed
- Salt to taste
Steps
- Char peppers. Place in container with lid until cool. Peel off skins.
- Juice peppers in juicer.
- Put pepper Juice into blender. Add vinegar. With blender on, add oil until thicken. Season with salt.
